Thai Coconut Fish,  Brussel Sprouts & Sweet Corn


  • Step 1: Preheat oven to 350 degrees  

  • Step 2:  Place contents of brussel sprouts package on baking pan and coat with olive oil mixture. Bake in oven for approximately 20-25 mins until tender

  • Step 3: Place fish on baking pan and cook for approximately 20-25 minutes, until internal temperature is 145 degrees 

  • Step 4: Place corn on baking sheet and cook for 15 mins until tender

  • Step 5: Remove items from oven, plate, and enjoy! 

Ways to make

Meals can be prepared in the oven as suggested. You can also pan sear the fish with olive oil or butter on med heat until internal temperature is 145 degrees. The brussel sprout and corn can be also be sautéed in a pan with olive oil on med heat until tender.
